Chicken Lime Soft Tacos

Put a refreshing spin on your favorite soft tacos by adding lime juice and lots of fresh vegetables. These are quick to prepare and make great leftovers for lunch.


Chicken breast1 ½ lbs680 g
Red wine vinegar¼ cup60 mL
Lime, juiced1 each1 each
Ground pepper1 tsp5 ml
Green onions, minced2 each2 each
Garlic cloves, minced2 each2 each
Fresh cilantro½ cup125 mL
Soft whole wheat tortillas6 each6 each

Toppings: Diced tomato, spinach, shredded cheese, sour cream, salsa, etc.


  1. Sauté chicken over medium heat until browned.
  2. Add vinegar, lime juice, pepper, green onions, and garlic.
  3. Simmer for 10 minutes or until chicken is cooked thoroughly.  Add cilantro and simmer for an additional 30 seconds.
  4. Serve on warmed tortillas with desired toppings.

Makes 6 servings (248 g /serving). 1 serving = 1 taco
